The roast date is not the expiration date. It's the starting gun. From the moment coffee is roasted, a clock starts — and what happens to the beans between the roaster and your cup determines whether you get the coffee they built or a degraded version of it.

Most people treat storage as an afterthought. They leave the bag open on the counter. They keep it next to the stove. They pour it into a glass jar and set it in a bright cabinet. All of those decisions are actively destroying the coffee.

Why Coffee Goes Stale

Coffee staling is an oxidation problem. During roasting, beans develop hundreds of volatile aromatic compounds. Those compounds are chemically unstable — once exposed to the wrong conditions, they break down rapidly and irreversibly.

The freshness window: Days 1–3: degassing. Days 4–14: peak expression. Weeks 3–4: aromatics soften. After week 4: noticeable decline. After 6–8 weeks: significant flattening. This is why Oak Line's barrel-aging deserves the protection the standard provides.

Keep it in the original bag — sealed

How long does an opened bag of coffee stay fresh?
Peak flavor is days 4–14 from roast. After opening, a properly resealed bag holds for 3–4 weeks. Ground coffee degrades within 7–10 days.
Can I store coffee in a glass jar?
Only if opaque or kept in a fully dark location. Clear glass on a countertop is one of the worst options.
Should I buy whole bean or pre-ground for freshness?
Whole bean. Grinding increases surface area, and oxidation accelerates in proportion.
