The Founder Series
Every bag in this series is roasted by Scott Ives in Peoria, Arizona, one drum at a time on an Aillio Bullet R2, under the Arizona Cottage Food Program. This is the coffee Scott roasts himself. It exists for one reason: total control over the cup, from green bean to sealed bag. The Founder Series is sold in Arizona only. Every other Zero Chaos series ships nationwide.
Roasted on the Bullet R2
No commercial roasting line touches this coffee. Each batch is small enough for one person to watch the entire roast, start to finish, and that is the point. We roast in small batches. Your coffee rests one full day in a vented bag after roasting, then ships, usually two days after the roast.
Smoke, If You Want It
Every Founder roast starts unsmoked. If you want smoke, pick a wood at checkout and we finish the batch with a short smoke rest before bagging, for a flat $2 more at any size. The house standard is a subtle smoke finish, not a campfire in every cup. Woods offered: alder, apple, cherry, oak, and pecan. The house picks: Alder for Daybreak, Apple for High Noon, Apple for Debrief, and Apple or Alder for Stand Down.
The Four Roasts
Daybreak | The Lift
Light roast, honey process. Costa Rica Tarrazú El Jaguar Honey, sourced through the Mission Coffees program at Genuine Origin, supporting women coffee growers. The lift you need before anything else gets decided.
From $12High Noon | The Momentum
Medium roast, washed. Colombia Huila Pitalito El Tiple, a clean, caramel-forward cup built for sustained output. The momentum that carries the work once the day is already moving.
From $12Debrief | The Exhale
Dark roast, washed. The same Colombia lot as High Noon, roasted longer into a full dark roast for weight and depth. The exhale that brings the day back down without losing it.

Medium-light decaf, water process. Mexico Chiapas, decaffeinated with water, temperature, and time, with no chemical solvents. The one roast built to tell your body the day is actually over.
