The Banana Cold Brew

The banana goes in during the steep. Not after. Fourteen hours in cold water with Zero Friction Classic and frozen ripe banana slices. No syrup. No sweetener. The banana is an input — not a garnish.

The Standard

Coffee: Zero Friction Classic · 48g per 24oz water
Banana: 1 ripe banana (brown-spotted) · sliced into coins · frozen overnight
Water: 24oz cold filtered water
Grind: Coarse
Steep: 14 hours refrigerated
Finish: 1.5oz heavy cream, frothed cold · pinch of cinnamon
Sweetener: None

Zero Brew Standard: 2 grams of coffee per ounce of water. This recipe brews at double strength — 48g coffee to 24oz water — so you dilute with ice at serving. Same ratio, half the water volume. The ice finishes it.

The Banana

Ripeness is not optional. A yellow-green banana has starch where the sweetness should be. You want brown spots — at minimum. A fully brown banana works and is actually ideal. As a banana ripens, its starches convert to simple sugars. Those sugars are what release into the cold brew during the steep and do the sweetening without any added input from you.

Freezing is the second variable. Slice the banana into coins — roughly ¼ inch thick — and freeze them flat in an airtight container or bag overnight before you brew. Freezing ruptures the cell walls of the banana, which accelerates how quickly the flavor and natural sugars release into the water during the steep. A fresh unfrozen banana will work in a pinch but the infusion will be noticeably weaker. Plan ahead. The banana prep takes 30 seconds the night before.

Why Zero Friction Classic

Zero Friction Classic is the daily driver — medium roast, built for flow state and the hours that follow the first cup. The roast carries natural chocolate and caramel undertones that pair with banana the way a medium roast should: cleanly, without competing. Zero Logic is too bright — the fruit-forward notes fight the banana instead of sitting alongside it. Zero Distraction is too dark and would overpower the infusion entirely. How to Make It

1. Prep the banana the night before. Peel a ripe brown-spotted banana and slice it into ¼-inch coins. Lay them flat on a small plate or in a zip bag and freeze. If your banana is already frozen from a previous prep, you're ready.

2. Grind and measure. Grind 48g of Zero Friction Classic coarse — same texture as the French press standard. Coarse grind for cold brew prevents over-extraction during the long steep. Too fine and you'll pull bitterness out of the coffee long before the banana has time to do its work. 3. Combine in a mason jar. Add the coffee grounds to a quart-sized mason jar. Add the frozen banana coins directly on top of the grounds. Pour 24oz of cold filtered water over everything. Stir once to make sure the grounds are saturated and the banana is submerged. Seal the jar.

4. Steep 14 hours in the refrigerator. Twelve hours is the minimum. Fourteen is the target. Sixteen is the ceiling — past that and the coffee starts pulling bitterness from the grounds that the banana sweetness can't balance. The banana infusion needs time but the coffee does too. They steep together. Set it up before bed, pull it out in the morning.

5. Strain carefully. Pour the cold brew through a fine mesh strainer lined with a coffee filter or cheesecloth into a pitcher or second jar. The banana slices will be soft and broken down — press them gently against the strainer to extract the last of their sweetness. Discard the solids. What's left is your concentrate.

6. Build the glass. Fill a glass with ice. Pour 6oz of concentrate over the ice — the ice dilutes it to drinking strength. If you want it stronger, start with 8oz and dial back from there. The concentrate will keep sealed in the refrigerator for up to 5 days.

7. Froth the cream and finish. Pour 1.5oz of cold heavy cream into a tall glass or jar. Froth with a handheld frother for 20-30 seconds — move it just under the surface, not at the bottom. You want it thick and pourable, not whipped. Pour it slow over the back of a spoon so it floats on top of the cold brew. Finish with a pinch of cinnamon over the cream. Don't stir. The cream mixes as you drink.

Common Problems

No banana flavor in the cup. Banana wasn't ripe enough or wasn't frozen. Yellow-green bananas have almost no free sugar to release. Brown spots are the signal. Freeze first — always.

Tastes bitter. Steeped too long or grind was too fine. Pull it at 14 hours. If you're at 16 and it tastes sharp, strain immediately regardless of where you are on the clock. The grind size matters here more than most cold brew recipes because you're steeping with additional organic material. Stay coarse.

Cloudy or thick concentrate. Normal. The banana releases starch into the water during the steep. Strain through a paper coffee filter and it clears up. Don't skip the filter — mesh alone won't catch all of it.

Cream won't float. It wasn't frothed enough or was poured too fast. Froth until it holds its shape when you tilt the glass slightly. Pour over the back of a spoon — that slows the pour and keeps it on top. If you want less drama, just pour it straight in. It still tastes right, just without the visual.
