Iced Banana Cream Cold Brew

This is the finish version. The banana isn't steeped into the cold brew — it's frothed with heavy cream and poured slow on top. No syrup. No sweetener. A ripe banana mashed smooth with cream and frothed cold. That's the whole recipe.

The Standard
Coffee: Zero Friction Classic cold brew concentrate · 6oz per serving
Banana: ½ ripe banana (brown-spotted) · mashed completely smooth
Cream: 2oz heavy cream · cold
Ice: Glass filled to rim
Cinnamon: Pinch on top

Cold brew prep: Use the banana cold brew steep recipe as your concentrate base, or brew standard Zero Friction Classic cold brew at double strength — 48g coffee to 24oz cold water, coarse grind, 14 hours refrigerated. Strain and use 6oz per serving over ice.
The Banana

Brown spots are not optional. A yellow-green banana has starch where the sugar should be. The spots tell you the starches have converted — that's what makes the cream sweet without adding anything. A fully brown banana is ideal. The riper it is, the less it takes to sweeten the cream and the more naturally it blends smooth without lumps fighting the frother.
Use half a banana per serving. Mash it completely flat with a fork before adding the cream — any chunks left in will clog the frother and create uneven texture. If you want it smoother than a fork can get it, mash and then press it through a fine mesh strainer. The goal is a smooth paste, not a puree with pieces.
How to Make It
1. Build the glass. Fill a glass with ice to the rim. Pour 6oz of cold brew concentrate over the ice. Set aside.
2. Mash the banana. Peel half a ripe brown-spotted banana and mash it completely smooth with a fork in a small bowl. Take your time here — the smoother the mash, the cleaner the froth. Press it through a strainer if you want a silkier result.
3. Combine banana and cream. Add the mashed banana to a tall glass or jar. Pour 2oz of cold heavy cream over it. Stir to combine before frothing — you want the banana and cream integrated, not layered.
4. Froth cold. Submerge the handheld frother just under the surface of the banana cream. Froth for 25–35 seconds, moving it slowly up and down to incorporate air. You want it thick and pourable — not whipped cream stiff, but holding shape. The banana adds natural density that helps it float better than plain cream.
5. Pour over the back of a spoon. Hold a spoon just above the surface of the cold brew. Pour the banana cream slowly against the back of the spoon so it spreads across the top rather than sinking. This is what creates the float. Once it's on top, finish with a pinch of cinnamon. Don't stir — the cream mixes as you drink.

Why This Works
Zero Friction Classic is a medium roast with natural chocolate and caramel undertones. Those notes sit alongside banana without competing — the same reason it's the right product for the cold brew steep version. The heavy cream fat binds with the banana's natural starches to create a float that holds longer than plain cream would. The banana adds density. The froth adds lift. Together they sit on top of the cold brew and gradually mix as you drink — getting sweeter as you go down the glass.

Common Problems
Cream sinks immediately. Either not frothed enough or poured too fast. Froth until it holds shape when you tilt the glass slightly. Pour against the back of a spoon — that slows the pour and distributes it across the surface.
Lumpy texture in the cream. Banana wasn't mashed smooth enough. Chunks block the frother from incorporating air evenly. Mash until completely flat, or press through a fine mesh strainer before adding cream.
Not sweet enough. Banana wasn't ripe enough. Brown spots are the minimum — the more spots, the sweeter the result. A barely yellow banana will add almost no sweetness.
Cold brew tastes bitter. Check your grind size — cold brew needs coarse, not medium. Also check steep time — past 16 hours and bitterness starts pulling through regardless of grind.
